Spinach & artichoke stuffed chicken
Creamy, Cheesy, Delicious! Spinach and Artichoke Dip Stuffed

Ingredients:
1/4 cup cottage cheese
1/4 cup plain Greek yogurt
1 cup cream cheese
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 can (14 oz) artichoke hearts, drained and roughly chopped
1 cup frozen spinach, thawed and drained well (or 2 cups fresh spinach, chopped and wilted)
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon smoked paprika (or regular paprika)
1/2 teaspoon onion powder
1 teaspoon Italian seasoning
1/4 cup of half and half
Splash of cooking sherry
Optional: a pinch of crushed red pepper flakes for heat
Instructions:
Preheat the Oven
Preheat your oven to 375°F (190°C).Season the chicken
Cut your chicken breast in half and season with paprika, italian seasoning, onion powder, garlic powder, salt and pepperCombine Ingredients
In a large mixing bowl, combine the cottage cheese, Greek yogurt, cream cheese mozzarella cheese, Parmesan cheese, artichoke hearts (chop if necessary), spinach, garlic. Mix until well incorporated.Stuff the chicken
Using only half of the mixture stuff your chicken breasts with ~2-3 TBSP of the mixture (depending on how big your chicken is). Place the other half of the mixture to the side.Cook the chicken
Heat an oven safe pan on the stove and sprinkle with olive oil. Add the chicken to the pan trying to keep the mixture inside, cook ~5 minutes on med heat then flip and cook the other side. While the chicken is cooking mix the half and half with the rest of your cream cheese mixture and mix well.Prepare to bake
When the chicken is done, remove from pan. Add a splash of half and half to pan and the cooking sherry to lift any pieces stuck to the pan. Then add the remaining mixture to the pan to heat. Slowly add the chicken back and cover with an oven safe lid.Bake the Dip
Bake at 375 F for 25-30 minutes or until the dip is hot and bubbly. Internal temp of 165 F. If you’d like the top to be golden, broil for an additional 2–3 minutes.Serve
Remove from the oven, let it cool slightly, and serve warm with crackers, chips, bread, or fresh veggies.
*You can blend your cottage cheese for a smoother consistency- if desired
